Fine Dining Restaurant In Preston Awarded Rossette By Inspectors

A fine dining restaurant has been awarded two AA Rosettes by inspectors in Preston.

263 is now the only restaurant in Preston to hold the honour and is run by Mark O’Rourke, who also owns Fino Tapas, The Otter’s Pocket and We Don’t Give A Fork.

When 263 first opened in September, Mark spoke openly about his ambition to be awarded a rosette for high standards. The restaurant is based inside Winckley Square Hotel and is open to the public.

Inspectors attended the restaurant last month (January 17th) and sat down with Mark to prepare their initial findings. For a restaurant to be awarded an AA Rosette, inspectors need to find “A greater precision is apparent in the cooking, and there will be obvious attention to the selection of quality ingredients.”

Mark O’Rourke told The Lancashire Post: “It was a surprise to be inspected by AA and we are honoured by the award and recognition less than four months after opening.

“I have to thank our head chef Charlie, it’s a vocation for him, not a job, he is a supremely talented chef. He is only 25 years old and some chefs don’t achieve rosettes in a lifetime.

“Charlie and I are very ambitious, we have set a benchmark we must maintain and it’s important we don’t take our for off the gas.”

263 is the only restaurant in Preston with two AA rosettes and is one of 8 in Lancashire to hold the honour.
